Sakinah House Sakinah House's New 2008 Spring Menu

In celebrating the beginning of Spring, Rydges Sabaya Resort’s Executive Chef, Lance Seeto has unveiled his newest seasonal menu showcasing Tropical North Queensland’s award-winning beef, organic dairy farms, Arabica coffee plantations, fresh seafood and literal treasure trove of fruit and vegetables.

A testament to Mr Seeto’s passion and skill, Rydges Sabaya Resort’s signature restaurant, Sakinah House has firmly established itself on the dining landscape of Port Douglas as a place to dine out and experience fine, regional cuisine.

According to Lance, his focus on local produce is perfectly conveyed in his latest dinner menu now available for both resort and restaurants guests.

“With a bounty of world class produce right on our doorstep, my responsibility as a chef is quite simple – to prepare and present food that reflects the region’s rich diversity and quality. In helping me create this vibrant new menu with Asia, Mediterranean and modern-Australian influences, my fellow chefs took it upon themselves to visit many of the local farmers and farm-gate producers in the area.

“While seated comfortably in the Balinese surrounds of Sakinah House, I invite guests to embark on a special gastronomic journey starting in the lush, green Cairns Highlands and Atherton Tablelands, where some of Australia’s best beef, lamb, poultry, pork and organic dairy produce can be found to the World-Heritage listed Great Barrier Reef and Daintree Rainforest – where fresh ocean seafood and a myriad of organically-grown tropical fruits and vegetables is in abundance,” he said.

The Spring 08 Sakinah House menu reads like a beautifully written book. Comprising a selection of starters, breads, entrees, mains, sides and desserts, the range of styles and flavours is perhaps best conveyed with the restaurant’s very own Tropical North Queensland Grazing Menu:

Pork Belly Cakes
Asian inspired savoury cakes of Tableland Pork Belly mince, coriander, ginger and chilli – served with green apple fritter and sweet soy reduction.

Great Barrier Reef Seafood
Showcase of freshly caught seafood from the Coral Sea and surrounding Great Barrier Reef, including Wild Barramundi, Sea Scallops, King Prawns and Black Mussels.

Reef and Rainforest
Aged, grain-fed beef eye fillet from the award-winning Morganbury Meat Company in the Atherton Tablelands with creamy garlic prawn cutlets, Kipfler potato gateau and Shiraz jus lie.

Far North Queensland Tropical Fruits
Showcase of seasonal tropical fruits grown in the region.

This menu is not officially featured on the menu, but indicates the creativity and style of Mr Seeto’s cuisine and extent of regional produce showcased.

In addition to Sakinah House’s Spring 08 Dinner Menu, guests and locals can look forward to a beautifully fresh all-day-dining menu of snacks, gourmet wraps, pizzas, burgers and highlights of main meals from the dinner menu. Kid-friendly dishes include fun names like Moo (Steak), Chicken Dance (Grilled Chicken), Noughts & Crosses (Pizza) and Popeye (Spinach & Ricotta Cannelloni with spinach salad). Available to enjoy by the pool, in the bars or in guest accommodation, the selection is comprehensive and will appeal to all appetites.

A very popular initiative in the food and beverage department of Rydges Sabaya Resort is its weekly get together for locals and guests. Friday night Beer and BBQ is a winner with local visitors and resort guests. Served alongside the Lotus Bar, it is reasonably priced from $ 25 per person and includes a selection of Tablelands Beef Sausages and free-range Chicken with salad and a beer.
