Ah! Sweet mystery of life… so goes the song from the operetta, Naughty Marietta. There is also a Spanish proverb, ‘Las cosas, claras y el chocolate espeso’ – it translates as ‘Ideas should be clear and chocolate thick’. Rydges South Bank Brisbane’s Head Chef at Bacchus Restaurant, Mark Penna, has had one fine clear idea and lots of fun with chocolate and other decadent desserts to create his Dessert Degustation.

To continue with translation and quotes, ‘degustation’ translates as ‘taste carefully’ and, to quote Chef Mark, “Life is uncertain, therefore always opt for the Dessert Degustation, it’s five times as sweet.”

Mark, together with Pastry Chef Tammy Cole, has unveiled a sensational culinary creation – a five-course Dessert Degustation starring headliners raspberry, chocolate, lemon, soufflé and sticky date. Perfect for a late night indulgence by itself, a leisurely end to a great meal or any sweet occasion really – what about Father’s Day?

And here’s another sweet surprise - this delicious adventure is just $49.00 per person, or $79 per person matched with the Sommelier's flight of wines from the award-winning wine list.

  • First up is the raspberry panacotta, vanilla cheesecake, raspberries and sorbet…

  • Second is chocolate brownie, hazelnut mousse and Frangelico ice-cream…

  • Then as a mid-course cleanser, lemon sticky polenta, almond scorched buttermilk ice-cream…

  • Starring next, the soufflé apple crumble, cinnamon anglaise, vanilla bean ice-cream…

  • To finish, the sticky date with toffee sauce, prune and Armagnac ice-cream.
